I think the vast majority of them do, but not all. The other common ordering is BGR.

I think G is in the middle of the pixel because it is the color our eyes are most sensitive to?

Human eyes are in fact most sensitive to green light, but I haven’t read anything to indicate that’s why it’s in the middle.
